Instructor : Executive Pastry Chef Pam Eldridge
Start Date: Monday, February 12th 2018 5pm
This 8 week course takes place on Monday Nights from 5 pm – 9 pm, concluding April 2nd 2018. The class will be taught by Executive Pastry Chef Pam Eldridge and all recipes will be from Chef Pam’s private collection with over 25 years of professional baking experience.
Each student must wear Closed Toe Shoes, wear an apron if desired, and bring a container to transport the items made in class.
The following is a list of the dates and what you will learn in each class. Please note that the order and content of the classes are subject to change as needed and determined by the instructor.
February 12 – Restaurant Style Desserts with a Valentine’s Theme – Verrine’s, Creme Brule, Chocolate Gourmandise (served warm), Creme Anglaise
February 19 – Pies & Tarts – Gianduja Crunch Chocolate Tart, Banana Cream Pie, Tarte Tatin, Frangipane Fruit Tart, Pie Dough, Tart Dough
February 26 – Yeast Breads – Focaccia, Dinner Rolls, Brioche, Sourdough
March 5 – Quick Breads – Popovers, Donut Muffins, Jalapeño Cheese Biscuits, Cornbread, Scones
March 12 – Cookies – St. Patty’s Day Decorated with Royal Icing Sugar Cookies, Cream Cheese Brownies, Chocolate Fleur de Sel, Wedding Cookies
March 19 – Breakfast & Tea Cakes – Lemon Tea Cake, Marble Pound Cake, Espresso Coffee Cake, Morning Glory Muffins
March 26 – Easter Baking – Challah, Coconut Cake, Swiss Meringue Buttercream, Baked Alaska, Basic Piping Techniques (to decorate the cake and baked Alaska)
April 2 – Pate a choux – Eclairs & Cream Puffs, Pastry Cream, Ganache, Ice Cream Roll Cake
Space is VERY limited in these programs so please make sure and register as soon as you are ready so we can make sure and hold a space for you!
Price: $1000 per person
Payment in full is required to register for this class before February 1st. We have very limited space available which requires a strict cancellation policy (below).
Refunds will not be given for any portion of the class after it begins, under any circumstances. Please make sure you are able to attend before registering. Before the class begins, if you have to cancel or withdraw we reserve the right to determine eligibility for refunds based case by case. If we have someone on the waitlist to take your place we will refund any tuition paid by you less any administrative or materials costs that have already been spent on your behalf. If we are unable to fill your spot we will issue a partial refund of up to 50% your currently paid tuition contribution.
